Pistachio, Asparagus and Blue Cheese Risotto

Gradually add vegetable stock while stirring, and mix in blanched asparagus. Finish with butter, blue cheese, parmesan, and California Pistachios for a luxurious, nutty crunch. Garnish with pistachio flakes, microgreens, and a drizzle of balsamic reduction for a visually stunning plate.

Malai Prawns

Chef Anand Panwar’s Malai Prawns combine coconut milk, aromatic spices, and pistachios to create a creamy, flavorful curry. Coconut oil, mustard seeds, and curry leaves form the base, followed by sautéing onions, pistachios, ginger, garlic, and green chilies. The prawns cook in this rich gravy for just a few minutes, then the dish is garnished with fresh curry leaves and chopped pistachios.

Pistachio Paneer

Also by Chef Panwar, Pistachio Paneer follows a similar method as the prawn curry but uses paneer instead of seafood. The resulting dish is a luscious, protein-rich curry with a nutty texture, perfect for pairing with rice or flatbreads.
